   Ingredients for Amla pickle :

  • Amla (Indian Gooseberries): 500g
  • Mustard oil: 2-3 tablespoons
  • Salt: 2 tablespoons (adjust to taste)
  • Turmeric powder: 1/2 teaspoon
  • Red chilli powder: 1-2 tablespoons (adjust to your spice preference)
  • Asafoetida (Hing): 1/4 teaspoon
  • Mustard seeds: 1 teaspoon
  • Fenugreek seeds: 1/2 teaspoon
  • Fennel seeds: 1/2 teaspoon (optional)
  • Cumin seeds: 1/2 teaspoon
  • Jaggery or sugar: 1 tablespoon (optional, for a sweet-tangy taste)
  • Lemon juice: 2 tablespoons (optional)

 Instructions for making Amla Pickle:

  1. Prep Amla: Wash and dry amla, then cut into pieces (or leave whole).
  2. Blanch Amla (optional): Boil for 5-7 minutes, drain, and cool.
  3. Roast Spices: Dry roast mustard, fenugreek, cumin, and fennel seeds. Cool, then grind coarsely.
  4. Mix: In a bowl, mix ground spices, salt, turmeric, chilli powder, hing, and jaggery (if using). Add amla.
  5. Heat Oil: Heat mustard oil, let it cool slightly, and pour over the amla mixture. Mix well.
  6. Store: Transfer to a jar, shake daily, and let it sit for 3-4 days before eating
