Mutton Curry

Mutton curry is rich in taste and aromatic components and is also a dish loved for its charm through centuries. Indian culture has been home to a variety of cuisines and this is just one among many. The blend of delicately prepared mutton and assorted spices creates a redolent curry that tastes like a hug for the stomach. Mutton curry is relished and loved all over the globe because it is boiled meticulously – this enhances the flavor of the dish and provides a melt-in-your-mouth experience. 

Just like Indian diversity in culture, Mutton curry differs in taste from region to region. Like any other delicacy, Mutton curry offers variety in the same dish according to the geographics. North Indian mutton curry uses heavy, grinded tomatoes for a rich sumptuous thickness, while other parts of South India prefer it tangy with coconut milk or tamarind’s tangy pulp. Versions as far apart as Bengal where mustard oil is used or yogurt and cream in Mughlai have one thing in common – all regions prepare mutton curry with love.

Ingredients for Mutton Curry:

  • Mutton (meat): 500 grams
  • Onions: 2 medium-sized (finely chopped)
  • Tomatoes: 2 (finely chopped)
  • Ginger-garlic paste: 2 tablespoons
  • Green chilies: 2 (slit)
  • Ghee/oil: 3-4 tablespoons
  • Coriander powder: 1 teaspoon
  • Cumin powder: 1 teaspoon
  • Turmeric powder: 1/2 teaspoon
  • Red chili powder: 1 teaspoon
  • Garam masala powder: 1 teaspoon
  • Yogurt: 2 tablespoons (whisked)
  • Salt: to taste
  • Water: as required (for desired consistency of the gravy)
  • Kasturi Methi (optional): 1 teaspoon
  • Fresh coriander: for garnish

How To Cook Mutton Curry:

Step 1: Clean the Mutton: Wash the Mutton pieces thoroughly and keep them aside.

Step 2: Prepare the Base: When the oil is hot, add cumin seeds to it, and once they begin to splutter, mix in the finely sliced onions. Stir the chopped onions till they become golden brown.

Step 3: Add Ginger-Garlic Paste: Mix in ginger-garlic paste and sauté for a minute until its smell goes away.

Step 4: Add the Spices: Then mix in turmeric, coriander powder, chili powder, cumin powder, stir, and let the spices simmer for one to two minutes. 

Step 5: Add Chopped Tomatoes: Then pour in the diced tomatoes and let them simmer till they melt and fuse well with the masala mix. Add Mutton: Add mutton pieces and check that all the meat is coated with the spices. Simmer for approximately 5-7 minutes, stirring the meat occasionally to ensure uniform browning.

Step 6: Add the Yogurt and Water: Pour in the yogurt and mix well. Add water to the dish, adjusting the amount based on whether you like the gravy to be thick or thin. Stir to combine.

Prepare the Mutton: Place the mutton in a pan and cover it with a lid. Keep the heat on low-medium for 45 minutes to 1 hour or until you are sure the mutton is tender and done. You can speed things up by using a pressure cooker instead, but make sure the mutton is cooked thoroughly and soft. 

If you prefer a spicier curry, you can increase the amount of green chilies or red chili powder.
