Lasooni Palak


 Spinach 300 gm.

Cumin seed -1 tbsp

Ginger-garlic paste -2 tbsp

Onion- 1 chopped

Chopped garlic- 4-5 cloves

2-3- dried chilies

1-2- chopped green chilies

Oil – 2 tbsp

Ghee- 2 tbsp

Turmeric powdwer-1/4 tbsp

Coriander powder – 1 tbsp

Besan/ gram flour- 1 tbsp

Tomato- 1 chopped

Sugar- ½ tbsp

Yogurt-2 tbsp

½ tbsp mixed spices

Salt- as require

First of all clean, chopped and wash spinach, in a pot pour enough water for boiling spinach, add spinach and press slightly, boil for 3 minutes, it becomes soft after that remove and transfer into cold water that helps in retaining color, now transfer half spinach into blender and make puree and remaining half spinach again chopped properly. Put  a pot on flame ,heat it and pour oil in it, add cumin seeds, green chilies, chopped onions and fry it for 3-4 minutes until soft, now add ginger-garlic paste and cook, add turmeric powder, coriander powder and mix properly, add besan to give texture in it and mix well in low flame for 2 minutes cook well until frothy on top, now add chopped tomato and cook for a while, add boiled chopped spinach, add puree, mix and cook well for 2 minutes, add salt, sugar  some water and mix it, add yogurt and cook 2 more minutes, add mix spices  and  mix ready for plating, transfer it into other pot, now, for tempering heat pot and pour ghee, add cumin seeds, chopped garlic and fry until its golden brown, add dried chilies, pour the tempering in palak and spead properly, now lasooni palak is ready to serve.
