Veg Biryani

INGRDIENTS-

Rice-1 ½ cup, oil-3 tbsp, cumin seeds-2 tbsp, cloves-8-10, green cardamom-4, bay-leaves-2, cinnamon-1 inch, onian-2, green chili-3, ginger-garlic paste-2 tbsp, tomato-2, turmeric- ¼ tbsp, coriander powder 2 tbsp, cumin powder 1 ½ tbsp, red chili powder-2 tbsp, chopped carrot-2, cauliflower- 16-18 pieces, yogurt 3 tbsp, French beans-5-6, green peas- ½ cup, salt as require, ghee-1tbsp, coriander leaves- ¼ cup, mix spices-2tbsp, fried onion ½ cup, mint leaves-4-5, keshar milk- 1tbsp, gulabari- 5-6 drops

Process: First of all soak basmati rice for half an hour, put a pot on flame and heated pot pour oil, add cumin seeds, cloves, green cardamom, cinnamon and sliced onion and fry it properly, in another pot, pour water as require and add green cardamom4-5, black cardamom-1, bay leaf-2, cinnamon-1 inch, clove-8-9, salt as needed, when water start boiling add rice in it.

On the other hand after frying onion, add green chili, ginger-garlic paste after that add tomato and mix well, then add turmeric powder, coriander powder, cumin powder, red chili powder and fry it properly after that add chopped carrot, cauliflower, beans and salt as needed and mix well for 5 minutes then, add yogurt, green pea, mix well and cover it for cooking veggies. When rice cooked strain water from it, when vegetables cooked properly separate half veggies in a bowl, and in remaining half veggies add coriander leaves, add mix spices, after that pour cooked rice in it, then remaining veggies, then add fried onions, mint leaves, add garam mashala, keshar milk, at last mix gulab water and cover it to cook for 5-6 minutes in low flame. Now Veg Biryani is ready to serve.
