Rabdi is a perfectly rich, creamy dessert, especially popular in North India. It is mostly served as dessert or along with Gulab Jamun, Jalebi, Malpua, and Poori. Here, we are going to share an easy recipe so you can prepare a delicious dessert anytime. Let’s start with the ingredients:
- 1 Litre Full cream milk
- Saffron (optional)
- 4 tbsp sugar
- ½ tbsp Cardamom powder
- Dry fruits
Step 1- Pour 1 litre of cream milk into a pan and cook until it becomes thick and is half its original quantity.
Step 2- Add little saffron if you want to add it. Mix it well.
Step 3- When a layer of cream forms in the milk, move it to the side of the pan.
Step 4- Keep stirring it, so there shouldn’t be any lumps. Cook the milk for at least 30 minutes.
Step 5- When it becomes thick and the milk remains half of the quantity. Add sugar and cardamom powder. Mix them well.
Step 6- Now, scrape the leftover cream from the side of the pan. Cook it for a few more minutes. At this stage, you can feel that the milk has changed color.
Step 7- Add some chopped nuts as per your taste.
Step 8- Turn off the gas. It’ll become thicker when it cools down.
Step 7- Your delicious rabdi is ready to serve. Enjoy!!
