“Mutton rezela” is a traditional dish from the Indian state of Goa. It’s a flavorful mutton (goat meat) curry typically cooked with a blend of spices and coconut milk. Here’s a basic recipe for Mutton Rezela:
Ingredients:
– 500g mutton (goat meat), cleaned and cut into pieces
– 2 onions, finely chopped
– 2 tomatoes, finely chopped
– 4-5 green chilies, slit lengthwise
– 1-inch ginger, finely chopped
– 5-6 garlic cloves, finely chopped
– 1/2 cup coconut milk
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon coriander powder
– 1/2 teaspoon cumin powder
– 1/2 teaspoon garam masala powder
– Salt to taste
– Oil for cooking
– Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan or pressure cooker. Add chopped onions and sauté until they turn golden brown.
- Add chopped ginger and garlic, and sauté for a couple of minutes until the raw smell goes away.
- Add chopped tomatoes and green chilies. Cook until tomatoes turn soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for a minute.
- Add the mutton pieces and mix them with the masala. Cook for 5-6 minutes until the mutton pieces are slightly browned.
- Pour in the coconut milk and mix well. If using a pressure cooker, add a little water (about 1/4 cup) to ensure there’s enough liquid for pressure cooking.
- Close the lid of the pressure cooker and cook for about 15-20 minutes or until the mutton is tender and cooked through. If cooking in a pan, cover and cook until the mutton is tender, adding water if necessary.
- Once the mutton is cooked, sprinkle garam masala powder and garnish with fresh coriander leaves.
