Mutton Rezela

Mutton rezela” is a traditional dish from the Indian state of Goa. It’s a flavorful mutton (goat meat) curry typically cooked with a blend of spices and coconut milk. Here’s a basic recipe for Mutton Rezela:

Ingredients:

– 500g mutton (goat meat), cleaned and cut into pieces
– 2 onions, finely chopped
– 2 tomatoes, finely chopped
– 4-5 green chilies, slit lengthwise
– 1-inch ginger, finely chopped
– 5-6 garlic cloves, finely chopped
– 1/2 cup coconut milk
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon coriander powder
– 1/2 teaspoon cumin powder
– 1/2 teaspoon garam masala powder
– Salt to taste
– Oil for cooking
– Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a pan or pressure cooker. Add chopped onions and sauté until they turn golden brown.
  2. Add chopped ginger and garlic, and sauté for a couple of minutes until the raw smell goes away.
  3. Add chopped tomatoes and green chilies. Cook until tomatoes turn soft and mushy.
  4. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for a minute.
  5. Add the mutton pieces and mix them with the masala. Cook for 5-6 minutes until the mutton pieces are slightly browned.
  6. Pour in the coconut milk and mix well. If using a pressure cooker, add a little water (about 1/4 cup) to ensure there’s enough liquid for pressure cooking.
  7. Close the lid of the pressure cooker and cook for about 15-20 minutes or until the mutton is tender and cooked through. If cooking in a pan, cover and cook until the mutton is tender, adding water if necessary.
  8. Once the mutton is cooked, sprinkle garam masala powder and garnish with fresh coriander leaves.
  9. Serve hot with rice or bread of your choice. Enjoy your delicious Mutton Rezela!
