  • 1 ripe banana, mashed
  • 1 cup all-purpose flour

  • 1/2 teaspoon ground cinnamon (optional)
  • 1 egg
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

  • Preheat your waffle iron.
  • In a large mixing bowl, combine the mashed banana, flour, sugar, baking powder, salt, and ground cinnamon (if using).
  • In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Lightly grease the waffle iron with non-stick cooking spray or brush with melted butter.
