Ingredients:
- Amla (Indian Gooseberries): 500g
- Mustard oil: 2-3 tablespoons
- Salt: 2 tablespoons (adjust to taste)
- Turmeric powder: 1/2 teaspoon
- Red chilli powder: 1-2 tablespoons (adjust to your spice preference)
- Asafoetida (Hing): 1/4 teaspoon
- Mustard seeds: 1 teaspoon
- Fenugreek seeds: 1/2 teaspoon
- Fennel seeds: 1/2 teaspoon (optional)
- Cumin seeds: 1/2 teaspoon
- Jaggery or sugar: 1 tablespoon (optional, for a sweet-tangy taste)
- Lemon juice: 2 tablespoons (optional)
Instructions:
- Prep Amla: Wash and dry amla, then cut into pieces (or leave whole).
- Blanch Amla (optional): Boil for 5-7 minutes, drain, and cool.
- Roast Spices: Dry roast mustard, fenugreek, cumin, and fennel seeds. Cool, then grind coarsely.
- Mix: In a bowl, mix ground spices, salt, turmeric, chilli powder, hing, and jaggery (if using). Add amla.
- Heat Oil: Heat mustard oil, let it cool slightly, and pour over the amla mixture. Mix well.
- Store: Transfer to a jar, shake daily, and let it sit for 3-4 days before eating.
