Badam Halwa With Jaggery

Badam halwa is a perfectly rich and healthy diet, it is rich in protein and good fats and fiber due which consumption of badam aids in weight loss. Because of the availability of riboflavin and L-cartine, it boosts the brain functioning and also reduces the risk of serious brain diseases, addition of ghee in a sweet dish regulates blood sugars. Saffron in addition to a giving a beautiful color. Jaggery is good source instead of sugar to weight loss, it’s also good option for diabetic patient, it helps in preventing constipation, boost immunity, helps in respiratory issues, helps in fighting flu and cold, detoxifies the body and control blood pressure levels, so this badam halwa is good source for healthy nutrition.

INGREDIENTS:

1 CUP ALMOND

Cashew nut 7-8 (chopped finely)

Milk 1 ½ cup

Ghee 3 tbsp.

Jaggery water ¾ cup

Saffron- one pinch

Cardamom powder- ¼ tbsp.

Process:

First of all soak badam in warm water for 3-4 hours, then drain water and peel the skin from badam.

Grind almonds to a coarse paste. It should have some texture, do not make it smooth paste.

In a heated pan, pour (clarified butter) ghee and fry chopped cashew nut and 4-5 chopped almonds, when it is roasted remove it from pan.

In the same pan, pour grinded paste of almonds and stir continuously, add milk in it and mix well and roast it for 15 minutes or all the moistures gets evaporated and it start to leave the sides of the pan.

Add jaggery water in it and stir properly, add pinch of saffron in it, add cardamom powder also and mix well.

Cook it until ghee start releasing from sides.

Garnish halwa with roasted cashew nut and almonds.

Now it’s done to serve.

Tips:

Stirring constantly is the key here. Otherwise, it sticks, burns to the bottom of the pan. This burning flavor will ruin the halwa taste.

Keep the gas in low flame.

Add ghee in two stages to get the best texture of halwa. First, in the beginning, second at the end of the cooking process.

You can use jaggery according to your taste.

STORAGE: This badam halwa stays good in airtight container in the refrigerator for up to a week.
