Chicken Biryani
Ingredients :
750 gm. Chicken
4-5 green cardamom
1 black cardamom
150 gm yogurt
3 onions
4 tomatoes
2 green chili chopped
2-2 tbsp ginger, garlic paste
3 tbsp biryani spices
1 tbsp kewra water, 1 tbsp kashmiri red chili
Coriander leaves, mint leaves, 1 bay leaf
Salt as require
Process: First of all wash rice and pour water in it and keep aside, then wash chicken also and add salt, turmeric, red chili, black pepper for magnate the chicken for half-an hour, after that chopped onions and tomatoes finely and keep separately, chop coriander and mint leaves also, now in a pan pour oil and heat it then add cardamom, bay leaf, onions and fry it till it change into golden brown, after that add chicken and fry it properly, then add chopped tomatoes, ginger, garlic paste, green chili, yogurt, biryani spices and salt, mix it well, add some water also, now in low flame cook chicken for 12-15 minutes, when chicken become soft, switch off the flame.
Now in another pot pour 2-3 litter water, add rice in boiling water and some salt in full flame, when rice start boiling and soften then switch off the flame, drain water from rice and spread it in a plate, now put a big pot in low flame, after that spread one layer of rice, then one layer half chicken, again one layer of rice and one layer of chicken so we add two layer of rice and two layer of chicken after that add red chili, add coriander leaves and mint leaves and also kewra essence cover the pot for 10-15 minutes in low flame. Now biryani is ready serve it from hot rayta.
