Malai Kofta

First of all we will start to make curry , heat a little bit oil in pan, add 2 tbsp butter, then we will add cinnamon, stick cinnamon, a bay leaf, 3-4 clove . 3-4 cardamom, 1 black cardamom, and some shahi jeera, , we cook it, now we add 1 cup chopped onion, sauté the onion lightly , while it’s cooking we add 2 chopped green chillies and cook it nicely after that we add garlic and chopped ginger , we again cook it lightly , now add 1/3 tbsp turmeric , 1 tbsp red chilli powder, 1 tbsp coriander powder, and little bit cumin powder, quick sauté it, now we add 2 cup chopped tomatoes, we add salt, some cashew nut and mix it well again we do not cook tomato too much , just have to lightly sauté till the good boil in it, after that we add 2 cup water to it , we cover it till the tomato get mashed and cashew nut soft, so the malai kofta curry is going to be ready, now we will ready for kofta preparation, to make kofta we have 250 gram
cheese which we have mashed and equal quantity of boiled and mashed potatoes, we add chopped coriander, chopped ginger and chopped green chillies add these in good quantity , we add corn flour for binding , add salt, some chopped dry fruit, and we mix it properly, after that take a small portion of mixture and you can make a round or an oblong shaped kofta , now deep fry properly these koftas and then pull them out and now prepare curry, tomato is now mashed , we blend it in grinder after that in a hot pan we pour the gravy with the help of filter. Add some water, to loosen it up, we use filter to remove fiber from tomato, so we get soft creamy gravy,, add some kasuri methi and also 1 tbsp sugar , some salt and cover it for five minutes after that we add some cream now gravy is done. So for serving we put kofta in a plate and then we pour gravy over it and then we place coriander leaves on it.


ADVICE : Don’t put kofta in hot boiling gravy it breaks , always pour gravy over kofta in plates.
