Veg Spring Rolls

Chinese vegetable spring rolls are popular starter or snacks that is served in Indo Chinese restaurants, These are perfect as a tea snack or for a weekend brunch, they can also be served for a dinner to accompany a bowl of delicious soup or noodles. This flaky spring rolls also go perfectly well with a hot cup of black tea or coffee.
Ingredients:
For dough:
Refined flour – 1 cup (125 grams)
Salt – ¼ tsp
For stuffing:
Oil- 2 tsp
Ginger – 1 tsp, grated
Green chili -2, finely chopped
Beans – ½ cup (chopped)
Carrot – ½ cup (chopped)
Green capsicum – ½ cup (chopped)
Red capsicum – ½ cup (chopped)
Salt – ½ tsp
Black pepper – ½ tsp
Cabbage – 1 cup (chopped)
Soya sauce – ½ tsp
Vinegar – ½ tsp
Tomato sauce – 1 tsp
Oil – for deep frying
Process:
Firstly we prepare dough, in a bowl we pour flour, add salt, and water to make soft dough, you can use oil also in your palm that’s why dough will be kneaded properly, now dough is read, keep it aside for 20 minutes.
Now divide the dough in equal size of ball, and start it to roll and flatten it in a rolling board, when one roll is flatten, we use oil in it and then sprinkle some dry flour over it, we make other wrapping, keep over first wrapper, like this in once we make three wrapper, and in a heated pan we put it for few seconds just to change the color of wrapper, there must not be any spot in rolls, after that remove all three wrapper individually and keep aside. Like this we prepare all wrappers.
Now let’s make stuffing, for this in a heated pan we pour 2 tsp oil, add grated ginger, green chili, stir for a while, then add beans, carrot and saute it for 1 minute then add green capsicum, red capsicum, add salt, black pepper powder, red chili powder, saute it well.
Now add cabbage and mix well then add soya sauce, vinegar, tomato sauce and mix well, do not cook the veggies for long time it must be crunchy. Turn off the flame and set aside for cool.
Now we take wrapper, spread veggies over it and roll tightly with the help of slurry in sides and seal it properly.
In a heated pan, pour oil for deep frying when oil heats we fry rolls in low fame until it change in to golden brown color, for one roll frying it takes 5-6 minute for frying. Transfer them to a kitchen tissue.
Spring roll is ready, with the help of knife we divide it in to pieces.
Serve spring rolls with chutney or tea.
