  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Salt and pepper to taste

For the Avocado Crema:

  • 1 ripe avocado
  • 1/4 cup Greek yogurt (or sour cream for a vegan version
  • 1 clove garlic, minced
  • 2 tablespoons lime juice
  • 2-4 tablespoons water (to thin as needed)
  • Salt to taste


  •  In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed—fluff with a fork and set aside.
  • In a blender or food processor, combine the flesh of one avocado, Greek yogurt (or sour cream), minced garlic, lime juice, and a pinch of salt. Blend until smooth. Add water, one tablespoon at a time, until you reach your desired consistency. Set aside.
  • Combine cooked quinoa, black beans, corn kernels, diced red bell pepper, cherry tomatoes, and finely chopped red onion in a large bowl. Mix well.
  • Divide the quinoa mixture into serving bowls. Top each bowl with avocado slices and a drizzle of the prepared avocado crema.
