Ingredients

For the Soup:

  •  2 cups sparkling cherries, pitted
  •  1 large ripe tomato, roughly chopped
  •  1/2 cucumber, peeled and more or less chopped
  • half of red bell pepper, more or less chopped
  • 1/four crimson onion, more or less chopped
  • 1 garlic clove, minced
  • 1-2 tablespoons purple wine vinegar (to taste)
  • 1-2 tablespoons olive oil (to taste)
  • Salt and black pepper to taste
  •  1/2 cup bloodless water (adjust for preferred consistency

For Garnish:

  • Fresh cherries, pitted and halved
  • Cucumber, finely diced
  • Red bell pepper, finely diced
  • Fresh basil or mint leaves
  • A drizzle of olive oil

Instructions

  • Pit the cherries and roughly chop the tomato, cucumber, red bell pepper, and crimson onion.
  • Mince the garlic clove.
  • In a blender, combine the cherries, tomato, cucumber, crimson bell pepper, pink onion, and minced garlic.
  • Add the pink wine vinegar, olive oil, salt, and black pepper.
  • Blend till smooth. If the aggregate is simply too thick, upload bloodless water regularly until you reach the desired consistency.
  • Taste the soup and regulate the seasoning with extra salt, pepper, or vinegar if wanted.
  • Chill the Soup:
  • Transfer the gazpacho to a field and relax inside the refrigerator for at the least 2 hours, or until very cold. This lets in the flavors to meld.
