  • 1 teaspoon paprika

Preheat your oven to 400°F (200°C). Soak wooden skewers in water for at least 30 minutes to prevent burning. In a large bowl, toss the sweet potato chunks, bell pepper chunks, and red onion chunks with olive oil, paprika, garlic powder, cumin, salt, and pepper until evenly coated. Thread the sweet potato, bell pepper, and onion onto the skewers, alternating between the vegetables. Place the skewers on a baking sheet lined with parchment paper or aluminum foil.
